做法:春笋切成(chéng )片后加少许盐(yán )捞出后用清水浸泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热(rè ),倒入2勺(sháo )油,放(fàng )入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻(fān )炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩住春笋,盖上锅(guō )盖(gài )大火(huǒ )煮开后转中(zhōng )火(huǒ )。煮(zhǔ )到水快熬干(gàn )的时候加入盐,翻(fān )炒均匀稍收汁(zhī )时盖(gài )上锅盖焖。
