做法:春笋切(qiē )成片后(hòu )加少许(xǔ )盐捞出后(hòu )用清水浸泡(pào ),生姜切片,葱(cōng )切成(chéng )段(duàn )。锅烧(shāo )热,倒入2勺油(yóu ),放入(rù )生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水(shuǐ )半掩住春笋,盖(gài )上锅(guō )盖大火煮开后(hòu )转中火。煮到水快熬干(gàn )的时候(hòu )加入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
