做(zuò )法(fǎ ):春笋切成片后(hòu )加少(shǎo )许盐捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生抽(chōu )、老抽、蚝油翻炒均匀,加入(rù )少量(liàng )清水半掩住春(chūn )笋,盖上锅盖(gài )大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬干的时(shí )候加(jiā )入盐,翻(fān )炒(chǎo )均匀稍收汁时盖上锅盖焖。
